Eating healthy isn't about putting boring foods in your body to look good. It's about finding ways to be creative with lean options to make them tasty and eating to feel good.
Let's be honest, if you're not enjoying your food, you probably aren't going to stick with it. It's supposed to be rewarding to eat. You deserve healthy options that taste good.
I struggled a lot with eating chicken, because I didn't know how to prepare it without drying it out.
In this post I'm going to show you all what I do to meal prep my chicken, and give you some seasoning ideas at the end. If buying a bunch of seasonings isn't really in your price range, there's no shame in investing in a large container of rub mix. I just moved into a new apartment, so to save some money I'm using a pre-made seasoning mix with some brown sugar.
PREPPING YOUR CHICKEN
I personally buy large packs of boneless chicken breast. First, I start off with cleaning up the meat.
Start off buy cutting off the fatty parts of the chicken breast.
After this, with thicker cuts of meat, cut the breast down the middle to make it thinner and easier to bake. This will reduce the cooking time and keep it from drying out.
*TIP* Cut up all the chicken breast in the pack and freeze whatever you aren't using that day. Freeze 1-2 breasts in a ziplock or eco-friendly reusable ziplock for easy prepping.
OVEN AND BAKING SHEET PREP
Begin preheating oven to 425F
Place a sheet of parchment paper on a baking sheet. If needed, cut parchment paper to fit baking sheet.
Place chicken breast on baking sheet.
Lightly drizzle olive oil over chicken breasts and rub in on one side.
Add seasoning to chicken breast and rub in. Flip and repeat the process of oiling and seasoning chicken breast. Here I'm using a tequila lime seasoning with some brown sugar.
Place chicken in oven at 425F for 18-25 minutes.

1/2 part salt
2 parts chili powder
2 parts thyme
2 parts garlic powder
3 parts brown sugar
2 parts coriander
1 part garlic salt
1 part black pepper
2 parts oregano
2 parts onion powder
lemon juice to preference
